                                  AMAZING FLOURLESS  PEANUT BUTTER COOKIES

Okay guys, this is my go-to peanut butter cookies recipe. It is so easy and quick to make and oh so delicious. The added plus is it's flourless. Trust me once you try this recipe it will be your go-to recipe as well. Let's get started!

Things you will need:

Mixer or Stand Mixer

Cookie Sheet

Measuring cups

Baking Spatula

1 egg at room temperature

1 cup of creamy peanut butter

1/4 cup of brown sugar

1/2 cup white sugar

Salt

Opt: Vanilla Extract

Recipe Yields 12 cookies

1. Get a cookie sheet and grease it. I normally grease cookie sheets regardless if they are nonstick or not. You can use butter, flour or some good ol' fashion PAM spray, although any nonstick spray will do!





2.  Pre-heat your oven. We are going to preheat the oven to 350 degrees F.

 
 
3.  While the oven is preheating we are going to gather all our ingredients together and get our equipment out. We are going to need one egg, 1/2 cup of white sugar, 1/4 cup of brown sugar, 1 cup of creamy peanut butter and a pinch of salt. If you would like you can also get a teaspoon of vanilla extract to add. I highly recommend you use a mixer or stand mixer instead of just a whisk to make your life much easier. I used my KitchenAid stand mixer with the paddle attachment.

 
 
4.  Add the peanut butter and both the brown and white sugar and mix on medium speed (that's about a 4 on the KitchenAid) for about 2-3 minutes until sugars dissolve and the batter gets fluffy.







 
 
5. Add the one egg and a pinch of salt  and make sure you scrape down before you start mixing again. Also if you are adding vanilla extract to this recipe, this would be the time to add it. Just add a teaspoon. This time we want to mix on medium speed for a good minute and then turn it up to high for a good minute or two. We want to make sure that the egg is incorporated and the mixture get more of a dough texture. Don't fear over mixing because there is no flour in these babies!

6. Now with the dough done we need to shape the cookies. What you need to do is wet your hands a tiny bit and then start grabbing from the dough and start shaping them into little balls as seen below. Don't worry if they're not exact, trust me it won't matter.


 
7. Now we need to get a fork with some sugar on the back. Just wet it a little to make sure the sugar sticks. This is going to be our magical tool to give the cookies their iconic trademark.
 
 
 
 
8. We're going to add the crisscross shape to the cookies. Simply start with one side and then the other. You don't want to use too much force, but enough to push the cookie down slightly. Make sure you only use the points of the fork not the entire fork.
 
 











 
All done with that step, look at those beauties :)

 
9. Now they're ready to go into the oven. We're going to bake them for exactly 10 minutes. Set a timer if you have one.

 
10. Pull them out when done and make sure you leave them on the sheet for 5 more minutes. This step is critical in the cookie making process. You can not take hot cookies off a cookie tray. Trust me it will not work. Be patient and leave them on there.



 
11. After 5 minutes, they will be ready to take off the sheet. You can then put it on any plate you have. Allow them to cool done for 10 minute or eat them right away, either is fine.

 
Nothing better than some milk and cookies!!

DELICIOUS LEMON-BERRY SHORTCAKE
 
 
This shortcake is so delicious and refreshing. It's moist, spongy and the flavor is oh so good. This is a very easy recipe to make and it's so great to eat on a hot summer day....or anytime really. So let's get started.

Equipment Needed:

1 8" cake pan

Baking spatula

Whisk

Bowl

Big measuring cup

Measuring cups and measuring spoons

Sifter

 

Ingredients:

Cake:

 1 and 1/3 cups all-purpose flour

1/2 cup sugar

2 teaspoons baking powder

1/4 teaspoon salt

1 room temperature egg

2/3 cup buttermilk at room temperature

1/4 butter, melted

1 tablespoon lemon juice

1 teaspoon grated lemon peel

1 teaspoon vanilla extract

1 cup sliced fresh strawberries

Topping:

1 and 1/2 cups sliced fresh strawberries

1 tablespoon lemon juice

1 teaspoon sugar

2 cups whipped topping



1. First thing we want to do is take out our 8" cake pan and grease it. You can grease it with some butter, flour or non-stick spray. I prefer to use the non-stick spray.





 
 
2. We want to pre-heat our oven to 350°F. This will allow our oven to pre-heat while we work.

 
3. We want to gather all our ingredients together. In French it's called "Mise en place". Basically meaning we have to get our ingredients out and ready for us to use. Once we do that we also want to take out our bowl and other equipment needed.
 
4. Place sifter in bowl or get sifter ready, depending on which kind you have.

 
5. Now we are going to place our dry ingredients all together. So in a large bowl, combine the flour, sugar, baking powder and salt and then sift it through.


 
6. This is how it looks after it's sifted. We sift to aerate and get rid of lumps and impurities.

 
7. Now our dry is done, so we have to work on the wet ingredients. In a bowl or a large measuring cup combine the buttermilk, egg, melted butter, lemon juice, lemon peel and vanilla and whisk until combined.




 
 
8. This is how the wet ingredients should like after being whisked together.

 
9. Now we want to combine our wet ingredients into our dry ingredients and combine until just moistened.

 
10. After it's all combined, we want to fold in the strawberries. Make sure you don't over mix it and just fold it in. We just want to combine the ingredients, not beat them to death. 



 
11. After you fold in the strawberries, we are going to transfer the batter into the cake pan.

 
12. Spread it around to fill the cake pan.

 
13. Bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean.

 
14. Once done take it out of the oven and let it cool for 10 minutes before removing from the pan. Look at that baby.

 
15. While it's cooling you can make the strawberry topping. In a bowl combine the strawberries, sugar and lemon juice and mix.




 
16. After the cake has been cooling for about 10-15 minutes, take it out of the pan and place on plate.

 
17. Once the cake is completely cool to the touch, then we are ready to assemble! Take the whipped topping and put it on top of the cake.




 
18. Add the strawberries to the top and arrange them how you want them.



 

 
19. Enjoy! THIS IS DELICIOUS. It's moist, spongy and light. Great on a hot day, but works for any day!
